These pancakes are easy to make and so healthy! Plus, my kids love them. The secret is in the flour.
1 c. Bob's Red Mill 100% stone ground whole wheat flour (you can find it at Winco)
2 tsp. baking powder
1/4 tsp. salt
1 egg
1 cup milk
2 Tbs. oil
Mix dry ingredients 1st, then mix wet in separate bowl. Pour wet ingredients into dry and stir to combine. Makes about 8 pancakes.
I'm thinking I'll add some wheat germ next time I make them for an extra healthy kick. I'll make these for lunch and serve them with a fruit smoothie. It sort of makes me feel like Super Mom!
