Taquitos

Baked Creamy Chicken Taquitos

Ingredients:
1/3 c cream cheese
1/4 c green salsa
1 T fresh lime juice
1/2 t cumin
1 t chili powder
1/4 t granulated garlic
3 T chopped cilantro
2 T sliced green onions
2 c cooked shredded chicken
1 c grated pepperjack cheese (or any cheese you have on hand)
small corn tortillas ( I like a local company that hand makes them, they are easier to work with without breaking and they taste way better. It's worth the extra dollar to get good quality tortillas.)
kosher salt
cooking spray

Directions:
heat oven to 425. line baking sheet with aluminum foil and spray with cooking spray. Combine first 10 ingredients mix well. (You can double the recipe and freeze the filling. That way you just pull out a batch and thaw it without having to touch a knife or mixing bowl before dinner.)
Soften some tortillas inbetween wet paper towels in the microwave for 30 seconds at a time.
Place 2-3 T of chicken mixture on the lower third of a tortilla, roll as tight as you can. lay seam side down on baking sheet. spray tops with cooking spray and sprinkle with salt.
Bake for 15-20 minutes or until edges are crisp and brown.
Dip them in salsa, sour cream and guacamole
