1 bunch of fresh broccoli
3 large chicken breasts
2 can cream of chicken soup
3/4 cup mayo
1/2 cup evaporated milk
1 T lemon juice
1/2 tsp curry powder
1 1/2 cup grated cheddar cheese
1 1/2 cup seasoned bread crumbs; mix with 1/4 cup melted butter or margarine
Cook Chicken and shred or chunk. Cut broccoli into individual flowerettes and steam for 3 minutes. mix soup, mayo, evaportated milk, lemon juice, and curry powder together.
Lay in casserold dish in the following order:
broccoli
chicken chunks
soup mixture
grated cheese
top with buttered bread crumbs. Bake 350 for 25-30 minutes. Serve over rice.
Made this for dinner last night and the family loved it! The curry adds a new twist to things!
