Some nights, I just need a quick and healthy meal to fill up little tummies. Here is one of those nights meals.
2 cubed chicken breasts
1 green bell pepper
1 red bell pepper
1 tbsp minced garlic
1 med onion
1 tbsp evoo
1/4 cup Yoshidas Gourmet cooking sauce*
Basically I threw in the oil, onion, and chicken and once the chicken was about half way done, I added the Yoshida's, bell peppers, and garlic.. I like my garlic stronger so I add it later. Then let simmer and finish cooking the chicken and let the liquid absorb and evaporate. I over rice.
Easy. Quick. Done.
Mission accomplished. Mom did it again :)
*So about this sauce... I kinda love it? I am sure that you can buy this many places but I buy it at Costco. Very versatile, I happen to also sneak it on some meatballs in the crockpot. Don't tell my husband, he thinks I'm slaving away)
