You know those slow mornings, when you wake up and have nothing pressing to do and don't feel like cleaning either.. so you fix up and big breakfast and lounge in your PJ's. Oh, maybe that's just me? This is that favorite breakfast we fix up. And lucky me, my husband loves to fix it. Great plain, with syrup, peanut butter, or jam.
Ingredients:
6 eggs
1/2 c sugar
1 c flour
1/2 tsp. vanilla
1 c milk
1/2 c butter
1/2 tsp salt
1/2 c sugar

Directions:
Melt butter in a 11 X 13 baking dish in the oven at 350 deg. Blend eggs in a blender for at least 2 mins. (This is crucial to get the pancakes nice a thick.) Add milk, flour, sugar, vanilla, and salt. Remove melted butter from over and pour egg mixture over melted butter. Bake @ 400 deg for 10 - 20 mins. Batter and edges will rise up the edges of the pan for a fun effect!

ReplyDeleteI have a similar recipe but we always called them pop up pancakes. Things always have lots of names. We have not had them in a long time either...hmm.
ReplyDeleteHa ha I made these for dinner Sat night! I don't add sugar though, a few less calories and they turn out just as good! :)
